Opening a Pizzeria? How to Choose the Right Commercial Pizza Oven

The oven is the heart of a pizzeria. It sets your menu, your ticket times, your kitchen layout and even how customers feel when they walk in. Before you sign a lease or order a single box of flour, work through these seven questions. They come from more than 20 years of building commercial pizza ovens at CALIFORNO.

1. What style of pizza will you serve?

Neapolitan pizza needs very high heat, around 850–900°F, and bakes in 60–90 seconds, which calls for a true refractory dome oven. New York or Roman styles bake at lower temperatures for longer. Your style decides the kind of oven you need, so settle it first.

2. How many pizzas per hour do you need?

Estimate your busiest hour, then size the oven floor to match. A larger floor holds more pizzas at once and keeps up on a Friday night. Undersizing is one of the most common and expensive mistakes new owners make, because you can't easily add capacity once the oven is built into the kitchen.

As a rough guide: a Neapolitan pizza bakes in about 90 seconds, so every pizza that fits on the floor at once adds roughly 30–40 pizzas per hour at full speed. Our commercial Verona 420 and Verona 560 ovens are built for restaurant volume.

3. Wood, gas or both?

Wood fire gives you theater and flavor that customers notice. Gas gives you consistency and an easier service for staff who are still learning. Check your local fire and building codes early. They affect venting, clearances and which fuel you're allowed to use.

4. Where will the oven go?

A commercial oven is heavy and needs proper venting, a fire-safe surround and clearance from walls. Plan the space with your architect or contractor before you build out. 5. Assembled oven or kit?

A factory-assembled oven arrives finished and is the fastest way to open. You set it in place, connect the venting and cure it. 6. Fixed kitchen or mobile?

Not every pizzeria needs four walls. A mobile oven or pizza trailer lets you test your concept at events, markets and private parties with far lower startup costs, and many owners use one to build a following before opening a storefront. 7. Who will support you after delivery?

An oven is a long-term investment. Buy from a builder who can help with installation, curing, training and service, not just a box on a truck. Ask any oven maker:

  • Is the oven built in the USA, and can I visit the shop?
  • Who helps me with installation and curing?
  • What does the warranty cover, and for how long?
  • How fast can I get parts if something breaks during service?

It depends on your busiest hour. Count how many pizzas you expect to sell at the peak and choose a floor that holds enough pizzas at once to keep up.

Is a wood-fired oven allowed in a restaurant?
In most places, yes, with the right venting, hood and clearances. Rules vary by city, so check with your local fire marshal and building department early.

How long does it take to get a commercial oven?
