The CALIFORNO Pizza Steel: restaurant-quality crust at home
Every CALIFORNO Pizza Steel is precision CNC cut from 1/4" ASTM A36 steel to a clean 16" x 16" square. The thick steel soaks up and holds heat, then releases it evenly into the dough, so you get a crisp, well-browned base with a light, airy crumb.

One steel, many styles
-
Neapolitan: Preheat high and bake fast for a soft, blistered crust.
-
New York style: Use a slightly longer bake for a foldable slice with a crisp bottom.
-
Detroit or Sicilian: Use it as a sturdy base for thicker, pan-style pies.
-
Flatbreads and calzones: Bake them on the steel for a crisp underside.
Works in your own oven
Set the steel on the middle or lower rack and let it preheat for at least 30 to 45 minutes, so it's fully hot before the pizza goes on. Use a peel dusted with semolina or flour to slide the pizza on.
Care instructions
- Do not use soap. Steel absorbs soap and can change the taste of your pizza.
- Do not put it in the dishwasher.
- Scrape off stuck food while the steel is still warm, then rinse with hot water and a stiff brush if needed.
- Dry it right away and rub on a thin coat of cooking oil to prevent rust.
