Single-piece dome vs. multi-piece dome
This is the biggest quality difference between kits, and most buyers don't know to ask.

Single-piece (seamless) dome: the whole dome is cast as one piece. There are no joints to crack or open up over years of heating and cooling, and assembly is much faster. Our Garzoni-260 and Garzoni-280 kits have single-piece domes.

Multi-piece dome: larger ovens are too big to ship in one piece, so the dome comes in sections that you join with mortar. Done right, it's just as strong. Our Garzoni-350 dome is 4 pieces and the Verona-420 is 5.

Brick-by-brick kits: you cut and lay dozens of firebricks yourself. Beautiful when a skilled mason does it, but it takes weeks and is easy to get wrong.
Also check the dome shape. A true round dome, the shape used in Naples for centuries, moves heat evenly across the cooking surface. Low-cost kits often use a barrel or flat-top shape that is cheaper to cast but leaves cold spots.

How hard is it to build?
If you can build a deck or lay pavers, you can build a pizza oven kit. The steps:

Build the base. A concrete-block stand, a counter in your outdoor kitchen, or our steel stand, which goes together in about an hour. The base must carry the full weight: a finished Garzoni-260 or 280, with the insulation and outside finish, weighs about 1,100–1,300 lb.

Lay the insulation blocks and the cooking surface pavers level on the base.

Set the dome on top (lifting help needed) and seal the joints with the high-heat mortar.

Wrap the dome in the insulation blanket, then cover it with your finish: stucco, stone, brick or tile.

Cure the oven with small fires over several days before the first big fire. Follow our day-by-day curing schedule.

5 mistakes to avoid when buying a pizza oven kit

Too little insulation. Ask how many inches come in the box. Less than 3" over the dome means more wood and shorter cooking sessions.

Buying too big. A restaurant-size oven in a backyard takes over an hour to heat and burns a lot of wood.
