2. What size oven do you need?
The oven floor decides how many pizzas you can bake at once, and that decides how many guests you can feed. A Neapolitan pizza bakes in about 90 seconds at 850–900°F, so every extra pizza that fits on the floor adds roughly 30–40 pizzas per hour at full speed.

3. Wood, gas or both?
Wood fire is the show. Guests gather around the flames, and the flavor is the reason many customers book a wood-fired caterer. Gas is easier to control and faster to heat, which helps on long days and with new staff. Some caterers run a wood oven with a gas burner so they can switch during service.

5. What to check before you buy

A real refractory oven. Ask what the dome is made of and how thick the insulation is. A thin oven loses heat between pizzas and can crack on the road.

Oven mounting. The oven must be secured to a steel frame built for the weight and vibration of towing. Ask how the oven is attached.

Chimney and clearances. The chimney needs to be tall enough to draw well and safe around guests and tents.

7. Permits and the health department: we handle it for you
The rules depend on how you'll sell:

Private events (open oven trailers). Weddings, parties and booked catering jobs. Open trailers like the Carrello don't need a health department permit as a mobile food unit, and they don't need sinks on board.

Selling to the public on the street (enclosed trailers only). Only an enclosed concession trailer is legal for street and public food sales. The health department requires the cook to work inside the trailer, with a 3-compartment sink and a hand-wash sink on board.
