Gourmet Vegetarian Pizza Recipe

Pizza doesn’t have to bland, just because you’re a vegetarian. After trying this vegetable pizza recipe, even meat-loving pizza eaters might not look back!

 

Making pizza at home is not only more cost effective, but you also get to put on as much or as little of the ingredients you love. As a result, homemade pizzas tend to be healthier. This homemade gourmet pizza is best made with fresh vegetables. You should also consider serving it with a side salad

 

This recipe makes one large pizza. Preparation time is 1 hour. Cooking time is 20 minutes.

 

Ingredients

Pizza Sauce

  • 1 dried basil leaf
  • 1 teaspoon of dried basil
  • 2 finely chopped garlic cloves
  • 1 teaspoon of dried oregano
  • 1 can chopped tomatoes
  • 1 teaspoon of pepper
  • 1 teaspoon of salt

Pizza Topping

  • 1 eggplant sliced 1cm thick and halved
  • 6 cherry tomatoes
  • 1 teaspoon of pepper
  • 5 tablespoons olive oil
  • 1 large thinly sliced onion
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon of salt
  • 2 thinly sliced mushrooms
  • 125g freshly sliced mozzarella
  • 1/2 cup grated cheddar cheese
  • 1/2 cup fresh baby spinach

Pizza Base

  • 150g pizza base flour
  • 125ml hot water
  • 2 tablespoons flour

Directions

  1. Preheat the oven to 130 C. If you’re using a wood-fired oven, make sure to choose a firewood that will complement your pizza taste.
  2. Place whole cherry tomatoes and eggplant on a baking tray. Cover with pepper, salt, and also 3 tablespoons of olive oil. Then, place in the oven for 1 hour or until well cooked, turning occasionally. The eggplant should be soggy with a crisp skin.
  3. To prepare the sauce, place the can of tomatoes, garlic, basil leaf, dried basil, oregano, pepper and also salt into a small saucepan. Then, leave it to simmer on medium heat, stirring occasionally, for half an hour or until most of the liquid has evaporated. When finished, it should stir like a thick sauce.
  4. Place the onion rings into a small non-stick fry pan with 2 tablespoons of oil. Cook on medium heat until soft. This will take approximately 20 minutes. Once well-cooked, add balsamic vinegar. Then, continue to cook slowly until the liquid has evaporated. The onions should be of a sticky consistency.
  5. To prepare the pizza base, place flour and water into a bowl. With your hands, mix the ingredients together until they form a small ball. Then, knead the dough for approximately 5 minutes. Place the dough on a floured bench, and roll with a floured rolling pin into a 30cm diameter base. Put this base on a second baking tray. Then, prick it thoroughly with a fork. Finally, place it in the oven with the baking tomatoes and eggplant for 10 minutes, or until it turns a light golden brown.
  6. Remove pizza base and vegetables from oven when ready.
  7. Increase oven temperature to 200 C.
  8. Apply tomato pizza sauce to the base. Then, add the cooked onions, eggplant, cherry tomatoes, mushrooms, mozzarella, spinach and also some cheddar.
  9. Finally, place the completed pizza in the oven for 15-20 minutes, or until well-cooked. Enjoy your vegetarian pizza recipe creation!

Tips

Serve with a side dish. For example, a light spinach and rocket salad.

For a stronger cheesy taste, you can also sprinkle shaved parmesan immediately prior to serving.
